Cabernet Blend, Metoxi X, Mount Athos, Halkidiki 2007

A wine worthy of the exceptional Mount Athos heritage. Its dark, explosive character is blended in absolute harmony with spices and complex fruit notes. The intense and generous presence of Cabernet Sauvignon carries the structure of the wine and provides the tannin backbone. The two indigenous varieties add the distinctiveness. Limnio is the middle body offering a special textural component that offers a special balance, while Xinomavro gives front floral aromas, earthy notes of tomato paste and an acid load that contributes to a very long aftertaste and a high ageing potential. Best served at 18-20o C it is exquisite with steak au poivre, roasted lamb ribs, duck in caramelized sauce, wild game and full-flavored cheese.THE VINEYARD
The mystic vineyard of Mount Athos is blessed by a unique microclimate, safeguarded by a natural shield of sea and mountain at an altitude of 250 meters. The sea abates the high summer temperatures and at the same time offers the necessary evening moisture to the vineyard soil. The evening temperature is kept low by the mountain freshness; this hinders the onset of the sugar breakdown cycle and facilitates a better maturation process. The grapes for Metoxi X Chromitsa are born on selected, low-yield parcels, planted on stony and dry site, helping to control vine growth and crop levels. Each variety is cultivated in separate hillside
blogs. The handpicked harvest takes place in the mid September.

Harvest: Handpicked in mid September

Vinification techniques: The grapes are transported to the winery of Halkidiki. Warm fermentation in stainless steel tanks after a cool juice soak and 20 days extended maceration on the skins translated to optimal color, flavor and soft tannin development. After pressing, the wine is racked directly into small, thin-staved, heavily-toasted barrels from French oak for almost a year (45% new barrels).

Ageing: 8-12 months in oak barrels, at least 6 months in the bottle.
